21 Day Fix: Shrimp & Garlic Quinoa
Ingredients:
- Bag of medium size shrimp
- 2 tbsp. Minced Garlic
- 1 bag Garlic Quinoa (or Brown Rice)
- Black Pepper to taste
- 1/4 tsp Kosher Salt
- 1/4 tsp Cumin
- Boil water (follow directions on bags) add the quinoa. Cover & Simmer for 14-18 minutes or until the water is all absorbed.
- On the side, remove all shrimp takes off of the thawed out shrimp. Place shrimp in a bowl and add salt, cumin, garlic & black pepper.
- Throw shrimp mix in a skillet and cook until fully cooked. (Do NOT over cook shrimp, it only takes 5-8 minutes, because the shrimp will come out rubbery)
- FINALLY, place the quinoa (or rice) in a bowl or plate. Add the shrimp on top & SERVE!
