21 Day Fix Banana Oat Pancakes

So this morning I woke up CRAVING something sweet!
I had no idea what to eat...

After thinking for a while my husband said to have pancakes.
My comeback was , "i cannot have pancakes! That is WAY to many calories"!

Then I suddenly had a light bulb LIGHT UP in my head!

I decided to make Banana Oat Pancakes!
BEST DECISION EVER!

Ingredients: 
  • 2 Eggs
  • 1/3 Cup Steel Cut Oats
  • 1/2 Banana 
  • 1 Tsp. Vanilla Extract 
  • Natural Syrup OR Honey 
 Instructions:
  1. Blend all ingredients together in a blender.
  2. Cook like regular pancakes.
  3. Top with syrup or honey.
  4. SERVE && ENJOY

21 Day Fix Stuffed Peppers


Do you have a picky spouse that will only eat certain foods?
Do you have a hard time finding foods to feed the whole family?
I DO!

My husband is extremely picky.
He doesn't like CHEESE but he eats pizza with cheese, Peppers with cheese, Mac N Chees (occasionally), ETC. I just don't get it so sometimes I just have to guess or make things and tell him dinner is a surprise and then he will eat whatever.

So every night he asks me what is for dinner, except tonight he did not ask. So I took it upon myself to make something that I know he isn't a super fan for but I LOVE. I tried changing the recipe to see if maybe he would like it better. (he isn't a big baked bell pepper fan)

STUFF BELLPEPPERS

Ingredients:
  • 2 Bell Peppers (makes 4, or depending on your family size)
  • 2 Jalapenos
  • 1/4 Onion
  • 2 cups Brown Rice, or one bag "boil in a bag"
  • 1 TBSP Chili Powder
  • ! TSP Cumin
  • 1/2 cup of spaghetti sauce (or salsa or tomato sauce)
  • 1 Lb Ground Turkey
  • Shredded Cheese
Instructions:
  1. Preheat oven to 400 degrees.
  2. Slice the peppers in half and clean insides.
  3. If you like the peppers a little softer you can place them in the over for 15 minutes without filling and remove(while everything else is cooking.
  4. Cook the brown rice for 10 minutes (or follow instructions)
  5. Cut up the jalapenos and onion and place to the side.
  6. Toss the ground turkey in a frying pan. Let cook for a few minutes and then toss in the jalapenos and onions.
  7. When it is almost done add the chili powder, cumin && Salsa (my preference/chunky). Stir to combine.
  8. Pour both the cooked ground turkey and the rice in a bowl to combine. Add extra salsa if you want.
  9. Take the peppers out of the oven and fill them with the mixture. Distribute evenly between the pepper-halves.
  10. Top with shredded cheese.
  11. Put back in the oven for another 15-20 minutes and you are done!

21 Day Fix Cucumber and Dill Summer Salad



Have you ever been on a certain diet or meal plan and you have basically made everything you can think of?

I sat down last night to make my meal plan for the next two weeks, along with my shopping list.
I have realized that if I make the SAME meals on the two Mondays for this pay check and so on...I save SO much money and I never have so sit there and just worry about what I am going to be making. As I am sitting there I am trying to come up with creative new recipes. My husband and I sometimes crave foods that we use to be able to have when we were not on the 21 DAY FIX. So I decided to venture out and see what I could replace to make it 21 DAY FIX APPROVED.

While I was on the Atkins diet from March to December of 2013, I lost 40 lbs! It was great but by the end of the 4th month I was SOOO tired and out of good ideas! So my Mother-In-Law and myself decided to venture out and see what we could change up...we started making Root Beer Floats (heavy cream and Diet Root Beer) and many more awesome treats ...

So when I was searching I found one of my favorite recipes EVER!

Cucumber and Dill Summer Salad

Step 1:
 Take your large cucumber(s) and cut it down the middle long ways.
 Then take each half and slice thinly.
Step 2:
  Next, take your onion and cut in half length wise and slice one half
  of that very very thinly and toss in the bowl with the cucumbers.
Step 3:
  Sprinkle in 2 TSP of Salt. (I use kosher salt but any salt is fine) MIX WELL.
Step 4:
  Next, ADD 3 TBSP of non-fat Greek Yogurt && Mix well.
Step 5:
  If you have fresh Dill from your garden that is great, if not take some Dill from the grocery store and sprinkle to desire. Mix Well.

You can either serve it right away (I CANT WAIT) or toss some saran wrap over it and serve it later on. ENJOY!!!

Self Control?

Who knows what I am talking about?
 
That Friday Night when you get home from work, sit on the couch and think to yourself "hey, I have worked hard this whole week. I deserve to enjoy an amazing glass of Cold Moscato, or an ICE COLD Bud Light...
 
Then you end up drinking WAY more than you meant to (or maybe a little).
Then you wake up the next morning not feeling too hot. (maybe a LOT hungover lol)
 
Then you wake up in a rare mood, and craving EVERYTHING greasy!
You want that delicious HOT DOG pizza you always see on TV.
You want that AMAZE-BALLS bowl of Ramen that you just made you kids.
You want that, oh so tasty, FUNNEL CAKE from the fair that your at with your family.
You want that SCRUMPTIOUS, fancy cupcake sitting in the window at your favorite coffee shop near you house.
 
SO MANY people think it is unbearable to sit there and stare or just dream. You MUST have that delicious vision. You can smell it, taste it in your mouth while its watering profusely.
THAT IS NOT TRUE!
 
Do you truly know how easy it is just turn away. I bet you $100 that if you could turn around and avoid all those bad decisions, those CALORIES, those cellulite forming carbs, that would feel like your on TOP of the world!
 
It is easier then you think! TRULY!
 
I am NOT judging you.
I am NOT telling you that I don't do this.
I AM ONE OF THESE PEOPLE!
 
My husband and I look forward to our drinks on the weekend.
To let loose and just relax with eachother.
Sit on the front porch, playing music, and just bullshitting with one another.
We have done that since we met.
 
Then we wake up the next day, hung over as all get up...
Then we wake up and say "oh this one donut would not be too bad".
Then it turns into "well lets go get some Mcdonals, because I don't feel like cooking".
Then it is "well a pizza sounds good, and TECHNICALLY I am 'allowed' to have like one piece".
Then AGAIN "well lets go get some ice cream since its 105 degrees and we will get back on track tomorrow or Monday"
 
I am SO done with these weekends!
A $30 night turns into a $100 weekend (or more).
The amount of money we could put away instead of doing this is unreal!
Have you ever sat down and calculated how much you spend on junk and fast food?
A LOT of people say that "eating healthy is so expensive"...
YOU KNOW WHAT!
ITS NOT!
If you go out to eat a WHOLE weekend you could spend anywhere from $125-300+...
BUT if you go grocery shopping on that money (for my family of 3) I could buy 2 weeks worth of healthy foods. Veggies, fruits, milk, cereal, dinners, and so much more!
 
SELF CONTROL IS THE KEY!
if you are working your butt off (literally) and you have had so much progress, why would you throw it all away for 1 super unhealthy meal?
You will NEVER get anywhere like that!
You will NOT reach your goals!
And once again you will just feel so crappy about yourself.
 
I PLEDGE to change this!
I promise to not eat this way.
Not to tell myself its ok.
I WILL have self control!

21 Day Fix: Shrimp & Garlic Quinoa

21 Day Fix: Shrimp & Garlic Quinoa
Ingredients:
  • Bag of medium size shrimp
  • 2 tbsp. Minced Garlic
  • 1 bag Garlic Quinoa (or Brown Rice)
  • Black Pepper to taste
  • 1/4 tsp Kosher Salt
  • 1/4 tsp Cumin
Directions:

  1. Boil water (follow directions on bags) add the quinoa. Cover & Simmer for 14-18 minutes or until the water is all absorbed.
  2. On the side, remove all shrimp takes off of the thawed out shrimp. Place shrimp in a bowl and add salt, cumin, garlic & black pepper.
  3. Throw shrimp mix in a skillet and cook until fully cooked. (Do NOT over cook shrimp, it only takes 5-8 minutes, because the shrimp will come out rubbery)
  4. FINALLY, place the quinoa (or rice) in a bowl or plate. Add the shrimp on top & SERVE!

21 Day Fix: Quinoa Taco Bake

21 Day Fix: Quinoa Taco Bake

Makes 4 Servings

Each Serving = 1 Yellow, 1/2 Green, 1/2 Purple, 1 Blue, 1 Red

Ingredients:
  • 1 cup uncooked Quinoa
  • 20 oz package of Lean Ground Beef
  • Chopped Red or Yellow or Green Bell Peppers
  • Chopped Onion & Jalapeno
  • Tomato Sauce 2 cups
  • Shredded Cheese (4 blue containers)
Freebie Ingredients:
  • Juice of 1 lime
  • Garlic cloves (minced) 2 tbsp.
  • 2 Tbsp Chili Powder
  • 2 Tsp Cumin
  • 1 Tsp Onion Powder
  • 1/3 Cup chopped Cilantro
  • Hot Sauce to taste
Directions

  1. Preheat Oven to 350 degrees F. Spray a 9X13 baking dish with cooking spray and set aside.
  2. Add Quinoa to 2 cups of water in a medium saucepan & bring to boil over medium heat. Boil for about 5 minutes. Turn hear to low and simmer for about 15 minutes, or until water is absorbed and seeds are soft. Remove from heat and fluff with a fork. Cover Quinoa and Set Aside.
  3. Spray frying pan with nonstick cooking spray. Add onion, Garlic, Jalapeno, & sauté over medium heat for one minute. Add the ground turkey, breaking it up as it browns. Cook for 5 minutes & add the peppers. Cook for 3-4 minutes more, or until meat is no longer pink.
  4. Add the juice of 1 lime, cumin, chili powder & cilantro. Stir to combine. Adjust seasonings to taste.
  5. Remove from heat & add the quinoa to the meat & veggie mixture. Pour in the tomato sauce and hot sauce (if desired) & stir. Add 1 blue container of the cheese & stir.
  6. Pour mixture into prepared baking dish. Top with the 3 remaining blue containers of cheese on top. (don't stir) Cover with foil & bake for 20 minutes. Remove foil & bake for an additional 10 minutes or until the cheese is melted & the edges are bubbling. Remove from over & let cool for 10 minutes. ENJOY :)

21 Day Fix: Chicken Enchiladas

When you think about a "lifestyle change" or a "diet" you think about starving your self SKINNY right?
UMMM...NO WAY!

With the 21 Day Fix you NEVER have to starve yourself. You can eat all those delicious cravings you have. This program is based on portion control, so as LONG as you are watching your portions  you can make any of your cravings a reality, AND your SWEETS can be made into a healthy snack or meal!

INGREDIENTS:
  • Enchilada Sauce
  • Shredded Cheese
  • Whole Grain Four Tortillas (8 or more depending on your family size)
  • 1 onion
  • (2-4) 4 oz chicken breasts, whole (frozen or thaw)
  • 1 Green Bell Pepper
  • 2 Jalapeno
  • Minced Garlic (2 tbsp.)
  • 2 tbsp. of Olive Oil
Instructions:
In a large frying pan, cover chicken breasts with water and boil until completely cooked (about 20-30 minutes frozen). While that is baking put the olive oil in a frying pan and let heat up. Toss in the Jalapenos, onions, and minced garlic in and cook for about 5 minutes. Once the chicken is baked, place into a strainer and let cool. After done cooling use a fork, or fingers, and shred the chicken. Toss the chicken into the mixture in frying pan. Let cook and heat back up for 5-8 minutes. Take off the frying pan and set to side. Season to taste!


Mix it up Baby:
Preheat the over to 350 degrees. Get a decent size dish and set to side. Pour about 1 cup of enchilada sauce into the bottom of the dish. Microwave FOUR tortillas for 15 seconds. Lay out one tortilla at a time and spread about 2 tbsp. of enchilada sauce in the tortilla. Spread out the chicken mixture in a row and fold tight enough to not spill out. Lay them into the pan SEAM SIDE DOWN. Repeat until completely filling the dish. Pour 1 CUP over the top of the enchiladas. Bake for 20 minutes and remove. Cover with 2 blue containers of shredded cheese (or about 1/2 cup). Bake an additional 10 minutes. Remove from over and let sit for about 15 minutes before serving. AND ENJOY THE DELICIOUSNESS!! :)

1 Yellow (2 tortillas)
1 Red (chicken mixture)
1/2 ish Green (Sauce)
1-2 Blue (cheese)

My Life Long Passion

Lets start from the beginning...

SO...Ever since I can remember I have loved dancing and sports. Dancing since I was 4 years old has helped me in so many aspects of LIFE. When you grow up in this life style YOU learn how to eat properly. How to follow rules. How to manage time. How to stay committed and reach your life long goals.

When I was 9 years old my family (army brat) was stationed to Copperas Cove, Texas. My mom found a studio called Gymkix. It was a beginner studio that had been a family run business. Stephanie was my dance coach. Her mother ran the front desk, And her sister Carrie was the Cheer coach. That was when I started my first competitive dance team. We wore blue long, bell bottom pants, with a navy blue spaghetti strap shirt. Then we had to wear our hair in a high bun on the VERY top of our heads. Wrapped around the bun was a SAUCER silver hair SCRUNCHY! YES! crazy right? lol. That was the beginning of the best times of my entire life. From there we updated costumes, increased class hours, and improved everything including the gym. Dancing was in my blood! Even to this day I still choreograph in my head to every song I hear, and I cannot go a single day without listening to music.

When I turned 14 years old my coach, Stephanie came to me at a dance competition and asked me how I would feel about becoming a Jr Coach? A Jr Coach was a beginning choreography coach that did not get paid real money, we got paid "Gymkix Bucks" lol. We could put them towards tuition, dance or company clothes, and food from the snack bar. I did not know how far it would take me or even if I wanted to continue dancing that next year. Well I continued to coach and when I was legally allowed to work I became a coach!
Becoming a COACH was one of the BEST decisions I ever made. As most people do there were times I failed, got in trouble, questioned my career, and lost all my motivation for choreography. One day I had a reality check and jumped back to what I loved! I became such a huge part of this gym. I went from a Jr Coach all the way to being able to jump into a gymnastics class, and a cheer class. I also was about to become a huge part of the After School Program we had opened. Being a part of that even expanded my horizons. I learned how to manage 30+ kids at one time, how to manage money, and organize classes. After that I went as far as becoming a Dance Manager. I choreographed and did lesson plans for all dance classes, inventory, and so much more. It only lasted a short time because I met my amazing husband and his career moved us away.
When I met my husband I thought it was not was it was going to turn out to be. He is an Infantryman in the United States Army and he was tattooed and extremely muscular. :) (my dream man) We met, moved in together, and got married within 2 MONTHS of knowing each other! 2 DAYS after getting married we found out we were expecting our beautiful baby girl, Mollee Meadow!

 
4 Years (almost 5) later and Dance still has a huge part in my heart and my body. I had a COACH reach out to me asking me about BEACHBODY! I was skeptical at first because I was not sure where this could really take me. I knew that MY LIFE LONG PASSION was helping people and helping people change their lives, better their health, and reach their goals. (exactly what I did as a dance teacher) Eventually (2 months later) I finally decided it was a good decision to write this new chapter in my life. I could not have been happier with this decision. The FRIENDSHIPS I have made in such a short time, I know, are going to be life long friends. The passion and motivation these people have PUSH me to want to reach MY goals, as well as help others!

I know that so many of YOU out there feel this same passion as I do and I would LOVE for you to join me on this journey!
